Inspired by @doctorbowl 
Ingredients: -

100g dark chocolate @rawhalo 
4tbsp of peanut butter @wholeearthfoods 
3tbsp of coconut oil - divided 
2 tbsp maple syrup -

Method: 
1. Melt the chocolate with 2 tbsp of coconut oil
2. Using miniature muffin liners, pour 2 tsp of chocolate to the bottom of the liner 
3. Freeze for 5-10 minutes, until the chocolate sets 
4. Meanwhile while the chocolate sets, melt the peanut butter with 1 tbsp of of coconut oil and maple syrup
5. Remove cups from freezer and pour about 2 tsp of peanut butter on top. 
6. Freeze for 5-10 minutes 
7. Then remove from freezer and top with remaining chocolate and freeze again for around 5 minutes 
8. Keep refrigerated and enjoy! -

I know that this way of living, by not hurting anyone, any animals, and making the world a better place, was, what I have envisioned myself doing. ⁣

So - I set myself the mission, to not only succeed in becoming the best version of myself on a vegan diet, but to help other women do the same. To help and guide them on how to thrive on a vegan diet.⁣
⁣
Now, looking back one year, I would have never imagined that by this time, I would have achieved so much more than I have dreamt of.⁣
⁣
And here I am, proud of myself for having achieved so much, but I am even prouder of the beautiful ladies, that have decided to walk this walk with me. For having put in their heart and soul into becoming the best version of themselves and to help the world be a better place!⁣

Ingredients (~12 cookies)
2 1/4 cup flour
1 tsp salt
1 tsp baking soda
2 tsp cornstarch
3/4 cup vegan margarine (from a tub, not the sticks)
1/4 cup nondairy milk (like almond or soy)
1 cup brown sugar
1/4 cup sugar
2 tsp vanilla extract
1 1/2 cup mini vegan chocolate chips

Directions:
Preheat the oven to 350°F.
Line two baking sheets with parchment paper. In a small mixing bowl, whisk the flour, salt, baking soda, and cornstarch.
In a larger mixing bowl, add the margarine, milk, sugars, and vanilla. Beat with an electric mixer. Add ~half of the flour mixture to the wet mixture and use a rubber scraper to combine. Add the rest and mix until combined. Fold in the chocolate chips.
Using a large scooper, place balls of dough on your baking sheet. Bake for 11-13 minutes, until they are baked to your liking (smaller cookies should be baked for 9-11 minutes).

For vegetables you could bake them or lightly pan fry them.
. 
Vegetables used:
🥦 1/2 head of broccoli florets.
🥦 5 cremini mushrooms, sliced. 
in a medium bowl gather:
1. 1/2 tsp of salt.
2. pepper to taste.
3. 2 T of olive oil or avocado oil.
4. 1 tsp of roasted garlic paste.
5. 1/2 tsp of onion powder.
. 
Mix ingredients and then toss your vegetables inside. Toss to coat.

Tempeh:
Using the same pan, place 1 T of maple syrup and 1 T of soy sauce and sauté your tempeh until the sauce becomes thick and glossy. Remove.

Make Udon noodles as per packaging.
Ingredients for the sauce:
1/2 tsp of white miso paste.
2 T of soy sauce.
1/2 tsp of onion powder.
1 T of garlic paste.
1 tsp of toasted sesame oil.
2 T of sambal oelek.
1 tsp of coconut sugar.
1.5 tsp of rice vinegar.
.
Mix all ingredients in a bowl. When noodles are done, place them in a deep pan. Pour the sauce over the noodles and gently mix until evenly coated and warm. Fold in the vegetables. Scoop some into a bowl and arrange your tempeh. Add extra broccoli to the side. Sprinkle with cilantro leaves and green onions and sesame seeds.

1 teaspoon tamari⠀
1 teaspoon maple syrup⠀
1/4 teaspoon salt⠀
⠀
Coconut bacon:⠀
2 cups coconut ribbons⠀
3 tablespoons tamari⠀
1.5 teaspoons liquid smoke⠀
1 teaspoon maple syrup⠀
Mix together and bake at 325, stirring every 5-7 minutes, until all liquid is absorbed (about 20-25 minutes). Allow to cool on the baking sheet.⠀

¿Qué es un arroz verde sin huancaina?!!! En mi casa es un must hacer huancaina cuando hay arroz verde. En este caso lo acompañé con trigo y quedo buenisimo! (A veces también lo combino con frijoles o tofu 🤩) Receta huancaina-es la receta de mi madre veganizada 💚: 5-6 ajíes amarillos
4 dientes de ajo 
1 cebolla picada 
150-180 gr de tofu suave dependiendo del espesor que quieran
1/3 taza de leche de almendras
Y el ingrediente secreto de mi mamá: un paquete de galletas club social ✨(sip son veganas 😋, también pueden usar galletas de soda)

En una sartén poner aceite, los ajíes cortados (lavados y sin venas para que no pique), la cebolla y el ajo y dejar que se salteen hasta que la cebolla este cocinada.

Huancaina peruana 🇵🇪 ¿Qué es un arroz verde sin huancaina?!!! En mi casa es un must hacer huancaina cuando hay arroz verde. En este caso lo acompañé con trigo y quedo buenisimo! (A veces también lo combino con frijoles o tofu 🤩) Receta huancaina-es la receta de mi madre veganizada 💚: 5-6 ajíes amarillos 4 dientes de ajo 1 cebolla picada 150-180 gr de tofu suave dependiendo del espesor que quieran 1/3 taza de leche de almendras Y el ingrediente secreto de mi mamá: un paquete de galletas club social ✨(sip son veganas 😋, también pueden usar galletas de soda) En una sartén poner aceite, los ajíes cortados (lavados y sin venas para que no pique), la cebolla y el ajo y dejar que se salteen hasta que la cebolla este cocinada. 1/2 cup tahini⠀
Juice of 1 lemon⠀
3/4 cup water (add less If you want a thicker dressing)⠀
3 tablespoons nutritional yeast⠀
3 cloves garlic⠀
1 teaspoon tamari⠀
1 teaspoon maple syrup⠀
1/4 teaspoon salt⠀
⠀
Coconut bacon:⠀
2 cups coconut ribbons⠀
3 tablespoons tamari⠀
1.5 teaspoons liquid smoke⠀
1 teaspoon maple syrup⠀
Mix together and bake at 325, stirring every 5-7 minutes, until all liquid is absorbed (about 20-25 minutes). Allow to cool on the baking sheet.⠀

I’m definitely feeling the consequences of my lockdown lifestyle, none of my summer clothes fit me and I can feel how unfit I’ve become when i’m out of breath on the walk to Morrisons. I wanna get back to being active, eating healthier and drinking less... starting tomorrow, Monday 1st June! I’ll still definitely be having takeaways, sausage sandwiches for breakfast and a few beers on a weekend... but just less. Im not setting a weight goal or anything, my goal is just that I wanna a) fit into my summer clothes and b) feel fitter and healthier again 💃🏼🚴‍♀️🧘🏼‍♀️🏃🏼‍♀️💪🏼

veganhealth Roasted Chickpeas and Avocado Toast by @twospoons.ca 💚 Who here would love to try some toast? ​

Ingredients
​1 can (400 ml) chickpeas
1/2 tsp paprika
2 tsp olive oil, plus more to drizzle
pinch sea salt
1 avocado
2 slices sourdough bread, 1-inch thick
sea salt and pepper

1. Preheat oven to 400F/200C. Strain chickpeas and pat dry. Toss into a mixing bowl with paprika, olive oil and a generous pinch of sea salt. Mix to combine. Line a baking tray with parchment paper and pour chickpeas onto tray. Bake in oven for 5 minutes, or until lightly brown and sizzling.
2. Toast two slices sourdough bread. Scoop avocado onto bread and gently press down with a fork to mash and spread even. Sprinkle with sea salt and pepper. Top toast with roasted chickpeas. Optional to sprinkle with more sea salt, pepper and cayenne pepper. Lightly drizzle with olive oil. .

Roasted Chickpeas and Avocado Toast by @twospoons.ca 💚 Who here would love to try some toast? ​ Follow @vegsfeed for more vegan recipes🌱 . Ingredients ​1 can (400 ml) chickpeas 1/2 tsp paprika 2 tsp olive oil, plus more to drizzle pinch sea salt 1 avocado 2 slices sourdough bread, 1-inch thick sea salt and pepper . . 1. Preheat oven to 400F/200C. Strain chickpeas and pat dry. Toss into a mixing bowl with paprika, olive oil and a generous pinch of sea salt. Mix to combine. Line a baking tray with parchment paper and pour chickpeas onto tray. Bake in oven for 5 minutes, or until lightly brown and sizzling. 2. Toast two slices sourdough bread. Scoop avocado onto bread and gently press down with a fork to mash and spread even. Sprinkle with sea salt and pepper. Top toast with roasted chickpeas. Optional to sprinkle with more sea salt, pepper and cayenne pepper. veganhealth Miso Glazed Eggplant by @plantbasedrd 
Follow @veganrecipelab for daily vegan recipes! 🌱 .⠀
Ingredients:⠀
⠀
1 medium eggplant, cap removed and cut directly in half lengthwise⠀
2 tbsp soy sauce⠀
1 tsp miso paste⠀
1 tbsp rice wine vinegar⠀
1 1/2 tbsp maple syrup ⠀
1 tsp garlic chili sauce or (1 tsp mustard, 1 tsp hot sauce and 1/2 tsp garlic powder) 🥣⠀

Instructions:⠀
.⠀
Set oven to 375F. Fill a medium bowl or dish with salted water and submerge both eggplant pieces under water for about 10 minutes. Remove eggplant and score it as desired (I did a cross hatch pattern). Whisk together remaining ingredients until smooth. Brush the surface of the eggplant with the sauce to fully coat the scored side of the eggplant. Take eggplant and place in the oven for 8 minutes. Pull eggplant out and baste again with the miso sauce. Place back in the oven for another 6-8 minutes, baste and cook again for another 4-5 minutes or until middle of eggplant is soft. Remove eggplant from oven, and brush again with remaining sauce. Carefully transfer eggplant to a serving plate and enjoy as desired. You can scoop out the inside with a spoon if you are not a fan of eggplant skin. 🤗

We think that if we restrict ourselves we will be able to just simply stop our binge. Unfortunately that 'forbidden fruit' is always too tempting and can lead us to a big binge later on.⁣⁠

Allow yourself to eat mindfully and do not suppress yourself. Make sure your caloric deficit is not too extreme. ⁣⁠

Yoga, meditation, conscious breathing exercises can help massively to understand and cope with our emotions. We would highly recommend using an emotional food journal to find the patterns.⁣⁠

~ 2 medium-large potatoes, cubed & soak in water to remove starch, drain well⁣⠀⠀
~ 3/4 cup frozen mixed carrots & peas⁣⠀⠀
~ 1 medium onion, 4 cloves garlic, 2 shallots, knob of ginger - all chopped⁣⠀⠀
~ 1.5 tablespoons red chili paste 🍃Spices (adjust to your preference): 1/2 tablespoon cumin seed, 3 tablespoons coriander powder, 3 tablespoons curry powder, 1 teaspoon turmeric powder⁣⠀⠀
~ veggie stock/water⁣⠀⠀
~ oil, salt to taste, melted vegan butter⁣, pandan leaves, tie to a knot (optional)⁣⠀⠀

~ 2 medium-large potatoes, cubed & soak in water to remove starch, drain well⁣⠀⠀
~ 3/4 cup frozen mixed carrots & peas⁣⠀⠀
~ 1 medium onion, 4 cloves garlic, 2 shallots, knob of ginger - all chopped⁣⠀⠀
~ 1.5 tablespoons red chili paste 🍃Spices (adjust to your preference): 1/2 tablespoon cumin seed, 3 tablespoons coriander powder, 3 tablespoons curry powder, 1 teaspoon turmeric powder⁣⠀⠀
~ veggie stock/water⁣⠀⠀
~ oil, salt to taste, melted vegan butter⁣, pandan leaves, tie to a knot (optional)⁣⠀⠀
⁣⠀⠀
✔️In a heated non-stick pan, sauté onion until soft. Continue to cook with garlic, shallots & ginger until fragrant. Season with spices. Add in sambal, then potatoes & give it a stir. Place a knotted pandan leave, season with salt, used ~ 1 teaspoon. Add enough water to cover all the potatoes. Place lid over, turn to boil & let simmer until potatoes are fork-tender. Stir in frozen carrots & peas, remove pandan leaves & let cool. Taste test⁣ ✔️cut each sheet to 6 pieces & roll to a square. Place 1-2 tablespoons of potato mixture and pleat to seal into a triangle⠀⠀

🍰Para hacer está torta necesitamos:

Ingredientes secos:
🍊 2 tazas y ½ de harina leudante (puede ser reemplazada por otra + 1 cucharada de polvo para hornear. No es lo mismo pero se puede)
🍊 1 taza y media de azúcar (la que quieran).
🍊 Ralladura de 1 naranja
🍊 Opcional: un cucharadita de bicarbonato.

Ingredientes húmedos:
🍊 1/4 taza de aceite.
🍊 Aprox 1 taza de agua (se va viendo la consistencia).
🍊 Jugo de una naranja.
🍊 Escencia de vainilla
🍊Opcional: chorrito de vinagre.
.
🍰Es tan fácil como mezclar primero los secos e ir agregando los húmedos. Mezclar hasta que no queden grumos. *Usar siempre la misma taza para las medidas*
🍰Volcar la mezcla en un molde (que ya tenga aceite y harina así no se pega)
🍰Horno durante aprox 40min. A fuego bajo (160°) que este precalentado.
🍰La torta está lista cuando se clava un palito o cuchillo y sale limpio!

🍰 Dejar enfriar y opcional azúcar impalpable para decorar!

Healthy, proteiny mini cinnamon buns... well deserved after a 40 km bike ride today
For the dough:
•1 cup self raising flour
•1 cup vegan Greek yog (mine was high in protein)
Filling:
•1/2 tsp cinnamon
•2 tsp coconut sugar •1 tsp vegan melted butter 
Roll up cut into however many rolls you want and bake for 20 mins @ 200 degrees. I then added some icing on top (just icing sugar + water)

For the Moussaka: - I sliced 2 aubergines and 5 potatoes and put them into the oven to cook- no oil! - heated some sliced onions into a pan, added herbs and a tin of tomatoes then the green lentils and spinach and parsley - for sauce no1 I heated 2tbsp margarine, added in 2tbsp of flour and mixed whilst slowly adding 2 cups of oatly milk - for sauce no2 I grinder 2 cups of cashews, added in 2 cloves of garlic and a load of nutritional yeast and pepper and grinded again till smooth
- once it's all ready you can stack it up and put it into the oven! 😊

For the Salad:
- chopped up 1 onion, 1 baby gem lettuce,  3 tomatos & some parsley and added herbs to it. It really is as easy as that! 😝

These 3 #runners were all on the podium of 2019, with Vadym winning the 111km and Mario and Roman being on first & second place of the 50km distance 😳💪🏻👌🏻

I get asked a lot for advice but it’s not about cutting out your cravings altogether. That’s a wishful thinking.

It’s not about building your willpower, either.

If you rely solely on self-discipline all-too-often then it ends up with a binge (and then a whimper) ⬇️ But the overeating cycle works like this:

Cues (the trigger) >>> Cravings (pleasure phase) >>> Response (taking action) >>> Reward (a box of cookies)

This can be a snowball effect. The more frequent you reward your brain the more likely it is to amplify the craving, and then will lead to overeating.

One of the keys I teach my online clients at MomentumMaker Vegan Academy is the ,,Strategic Questions”

When you are emotionally craving a salty-sweety ,,fat ass’’ junk food, use the HALT method.

Am I Hungry?
Am I Angry?
Am I Lonely?
Am I Tired?

Because most of the time, you are STRESSED and that’s normal.

By using this method, transition your mindset to do something different growth-driven tasks:

Petting your dog + meditating
FaceTiming your company team/family
Cleaning your PC if you’re an IT dude
Walking while listening to valuable podcasts

Breaking bad habits take time & effort. The best way to fix this is to start changing your identity & perspective.

I just had my watermelon instead of going all-in with that banana bread but at least I had some of it & enjoyed it 🙂

We sat at lunchtime thinking of what different meal we could use @vivavivera Greek pieces with instead of our usual kebabs. So we thought of aglio e olio and mixed in the pieces. 
Ingredients:
4 cloves of garlic finely sliced 
2 handfuls of baby plum tomatoes.
handful of Mixed olives sliced
1 pack of vivera Greek style pieces
Olive oil
Fresh parsley
Tagliatelle and we threw in some wholewheat spaghetti to mix it up. 
Wild kale flower to decorate (I couldn't resist it looked too pretty) .
Method:
Place baby plum tomatoes in a oven proof dish coat with olive oil, pinch of salt and pepper and place into the oven on 180 degrees gas mark 4 for 10-15 mins until baked.
Next boil your tagliatelle using guidelines on the packet
In a frying pan add 2 tbsp of olive oil and turn gas on to a low setting. Place sliced garlic into the oil and let it slowly cook until golden brown. Add in the Greek pieces and cook for 5 mins. Take the tomatoes from the oven and add into the frying pan and also add in the sliced olives.
