2 eggs whisked and mixed with 1 cup almond flour, 1 tsp vanilla, 1/4 tsp nutmeg, 3 tbsp maple syrup, 1 tsp baking powder and sprinkles.  Add batter to donut pan sprayed with coconut oil spray and bake for about 18 minutes at 350F.  Cool and then glaze with 1/4 cup coconut butter mixed with 2 tbsp maple syrup.  Top with sprinkles.

This makes an easy weekday supper. While you have the oven on you can throw some tender-stem broccoli into another dish, drizzle with olive oil and add some chopped almonds. Add some white beans and you have a substantial meal. ⠀

4 salmon fillets ⠀
2 garlic cloves, chopped ⠀
6 sprigs of rosemary, leaves only ⠀
Pinch of salt ⠀
1 lemon, juice only ⠀
1 lemon, sliced ⠀
3 tablespoons olive oil ⠀
2 tablespoons capers ⠀
⠀
Method⠀
⠀
1. Place the garlic, rosemary and salt in a pestle & mortar and pound to a paste. Add the lemon and olive oil.⠀

2. Place the salmon in a baking dish and pour over the marinade. Scatter over the capers and place a slice of lemon on each fillet. ⠀

paleorecipes Today was my first time smoking all by myself as well as our fort time smoking a chicken or a beef roast. It turned out really good. The chicken was perfect and amazingly juice. The beef was a little more done than we wanted but was still so good. It had a crispy exterior but soft inside. We paired this we lots of veggies like normal and followed it up with some paleo banana blueberry “ice cream”. Thanks to @nomnompaleo  for the “ice cream” recipe that was so easy my 4 year old did it all by herself (mommy watched). I lobe letting my kids become independent and having them cook, clean, and okay along side me. .

2020 is going pretty badly - we can all probably agree. People have different coping mechanisms - mine is usually food. (If you know me well, you know that I am lactose intolerant but have been eating these anyway) 😩

Keeping the caption brief, I will just say that in this moment, I hope we are all taking care of ourselves (whatever that may look like). I also hope we are aware of what is going on in the world and trying to do our part 💪🏽 There is a lot happening, all at once. Idk if anyone else struggles with this but there is so much happening, I don’t know where to look and what to talk about first? It is impossible to talk about them all, and yet it is critical that we do 🤍

This may look like fighting against human lives being lost unnecessarily, against police brutality, against racism, for justice, for advocating peace and awareness, or staying indoors and social distancing, or being sustainable to make sure our earth doesn’t suffer more.

Whatever it is, I hope we all do our part! But I hope we take care of ourselves while doing it!

Well we didn’t exactly do a hamburger but we did grill out Italian sausages and had them on burger buns with cole slaw. So technically some kind of burger. They were so, so good! The grain free buns were fluffy and soft. We put them in the grill to to warm up. For the recipe on the buns click on the link in my bio for the bread. I show how to make burger buns along with other types of bread that taste just like the real thing but are paleo, gluten free and grain free.

paleorecipes Cod with Tomato Fennel Sauce
I like to try new recipes regularly so I subscribe to a few food magazines (super old school, I know, but kind of a guilty pleasure 😆). I also use IG to get food & recipe inspo, so thanks to everyone that makes & posts delicious food! 
This cod dish came from my last @foodnetwork magazine and I wanted to try it because I like fish dishes & fennel too. It had AMAZING flavor and was super easy to make on a weeknight, so highly recommend! 
#foodnetworkrecipe 
1 onion, sliced
1 fennel bulb, sliced 
2 garlic cloves, minced
1tsp dried oregano 
1/3 c kalamata olives, halved
1/2 tsp red pepper flakes
1/3 c dry white wine
28oz can whole peeled tomatoes, crushed by hand
4 cod fillets
Sauté onion & fennel with olive oil and a pinch of salt over medium heat for 10min or until tender.
Add garlic, oregano, olives & pepper flakes and cook for another 1-2min.
Add wine and cook until mostly evaporated.
Add tomatoes with juice & bring to a boil, reduce & simmer until thickened (about 5min).
Pat cod dry with a paper towel, then season with S&P, then nestle into the sauce & cook until flaky (about 8-10min).
Serve with your fave toasted bread!

Cod with Tomato Fennel Sauce I like to try new recipes regularly so I subscribe to a few food magazines (super old school, I know, but kind of a guilty pleasure 😆). I also use IG to get food & recipe inspo, so thanks to everyone that makes & posts delicious food! This cod dish came from my last @foodnetwork magazine and I wanted to try it because I like fish dishes & fennel too. It had AMAZING flavor and was super easy to make on a weeknight, so highly recommend! #foodnetworkrecipe 1 onion, sliced 1 fennel bulb, sliced 2 garlic cloves, minced 1tsp dried oregano 1/3 c kalamata olives, halved 1/2 tsp red pepper flakes 1/3 c dry white wine 28oz can whole peeled tomatoes, crushed by hand 4 cod fillets Sauté onion & fennel with olive oil and a pinch of salt over medium heat for 10min or until tender. Add garlic, oregano, olives & pepper flakes and cook for another 1-2min. Add wine and cook until mostly evaporated. Add tomatoes with juice & bring to a boil, reduce & simmer until thickened (about 5min). Pat cod dry with a paper towel, then season with S&P, then nestle into the sauce & cook until flaky (about 8-10min). Instant Pot Chili #whole30approved ⁣
• 1 tbsp olive oil ⁣
• 2.5-3 lbs lean ground beef ⁣
• 1/2 white onion, chopped ⁣
• 6 garlic cloves, minced⁣
• 2 bell peppers chopped (red & green) ⁣
• 2 - 14.5oz cans fire roasted tomatoes⁣
• 1 - 6oz can tomato paste ⁣
• 1 - 4oz can green chili’s ⁣
• 1 cup beef broth ⁣
• 4 tbsp chili powder ⁣
• 1 tsp cumin⁣
• 1 tsp pepper⁣
• 2 tsp sea salt ⁣
⁣
1. Turn Instant pot to sauté and heat olive oil. Add garlic and cook until fragrant. Add onion and cook until just about translucent. Add beef and cook until browned. ⁣
2. Add the remaining ingredients, stir and lock the lid in place. ⁣
3. Put on pressure cook for 30 mins. It’s best to let it come to a natural release to soak up all the flavors. Try to wait at least 10 mins if you’re low on time. ⁣
4. Give it a good stir to combine and enjoy!!
