Many kids across Australia and New Zealand are heading back to school over the next couple of weeks and so many parents will be back to packing school lunch boxes.

So I thought I’d share my top tips for packing school lunches with you!
•
➕PLAN THOSE LUNCHES➕
•
My first tip for packing school lunches is to plan them! If you do not meal plan already, you NEED to. It saves you time and money. I find it easy to plan out my meals and lunchboxes for the week and at the same time I write out my grocery list.
•
➕BULK BAKE➕
•
A handy habit to get in to is bake multiple batches of baking in one day and freeze in reusable ziplock bags or containers to use throughout the term. SIMPLE and really not much more effort than baking one batch. Frozen baked goods normally last 2-3 months so you can bake and freeze enough to last you the whole term.
•
➕EMBRACE YOUR FREEZER➕
•
I have already spoken about baking ahead and freezing for school lunches but it is not just baking you can freeze. You can also freeze pre-made sandwiches, bread rolls and croissants and have this ready to pull out as needed. But just a note. Not all fillings freeze equally. Don’t go freezing lettuce you will end up with slimy green gunk. But ham and other deli meats tend to freeze well, as does with cheese.

➕PREP AHEAD➕
•
Other than baking and sandwiches you can also prepare fruit and vegetables and other snacks in advance and in bulk once or twice a week to make packing those lunchboxes even easier.

Ingredients: watermelon, grilled halloumi, chilli, mint, cucumber, rocket and tomato. So simple but so good.

Hello les gourmand.e.s! J'espère que vous allez bien ! Moi je reprends petit à petit le rythme du travail sur site, avec les adaptations nécessaires. Mais j'avoue que ce n'est pas facile quand on a un métier basé sur l'humain, sur le mouvement et sur le contact corporel...

Ducoup avec la reprise, je reprends aussi mes lunchbox, avec des recettes super faciles à réaliser, et qui se conservent bien, comme ces spaghettis aux épinards et au chèvre.
.
Pour 2 portions :
- 160g de spaghettis complets
- 300g d'épinards frais
- 20g de bûche de chèvre
- 1 cube de bouillon
- 60g de ricotta
- 100mL de lait
- une dizaine de noix de cajou
.
👉 Faire bouillir une casserole d'eau avec le cube de bouillon.
👉 Ajouter les spaghettis et laisser cuire environ 6 minutes.
👉 Égoutter puis remettre les spaghettis dans la casserole.
👉 Ajouter le lait, les épinards et la ricotta.
👉 Mélanger et laisser cuire quelques minutes jusqu'à ce que le lait soit absorbé par les pâtes.
👉 Terminer en ajoutant la bûche de chèvre en morceaux et les noix de cajou concassées.

Par portion (2) : 460kcal / 65G / 12L / 26P / 6F.

N'hésitez pas à adapter les portions en fonction de VOS besoins nutritionnels.

Et pour encore plus de praticité, j'en ai mis une portion dans un Tupperware au congélateur, que je n'aurais plus qu'à décongeler au dernier moment si je n'ai pas eu le temps de me préparer un repas. Ça évite d'aller s'acheter un sandwich ou un plat préparé 😘

Anywho, I was spent yesterday after we finished to say the least. Hoping to finish up what I need to then get outside to enjoy the summer weather we are having. Which sandwich should I make? Sweet or Savory?

1️⃣ Avocado and egg salad with spinach. Simply chop up some hard boiled eggs, avocado and baby spinach. Add a little yogurt or mayo for some creaminess, salt and pepper to taste, a little paprika, squeeze of lemon to preserve the avocado and some chopped scallions. If you’re prepping this it lasts a good 4 days in the fridge. I usually make the egg salad and put on the sandwich when I am ready to East. Served with some greens, berries and yogurt.
2️⃣ Mashed raspberries, sliced banana, almond butter. Serve with some greens, carrots, chocolate chips and yogurt for some extra protein. •

If you caught my stories today I made my best yet gluten free artisan loaf and now I can’t get a sandwich off my mind...throwing it back to two of my favorite ways combos. Hope you all had a wonderful weekend. Similarly, the volume, essentially made up of fruit and vegetables - fibre and water, can help regulate the energy density of a meal. Filling up on cheese is a great deal harder than filling up on a mixture of cheese and vegetables.

lunchboxideas Dobra, chyba w końcu udane podejście do tofu. Przy okazji wyszedł mi całkiem spory objętościowo posiłek. Przyda się wok lub duża, głęboka patelnia.

Makaron soba z tofu, pieczarkami i warzywami.

Składniki na 3 porcje:

300g tofu naturalnego
150g makaronu soba
1 średnia cukinia
1 duża marchewka
300g pieczarek
1 duża cebula czerwona
sól, pieprz, łyżka octu ryżowego
1 łyżka oliwy

Składniki na marynatę do tofu:

6 łyżek sosu sojowego
3 łyżki sosu teryaki
4 ząbki czosnku
1 łyżka ostrego sosu sriracha
1 papryczka chilli
3 cm kawałek korzenia imbiru
2 łyżki oliwy/oleju sezamowego

Dodatkowo szczypiorek do posypania

Sposób przygotowania:

Marynata: siekamy chilli, czosnek przeciskamy przez prasę, imbir ścieramy na drobnych oczkach, wszystko przekładamy do słoika lub pojemnika, w którym będziemy marynować tofu. Tofu kroimy w kostkę, umieszczamy w słoiku, wlewamy sosy i oliwę. Zamykamy słoik i potrząsaniu, tak, by wszystkie składniki pokryły tofu. Odstawiamy do lodówki.
Bierzemy się za główne danie. Ważne, żeby wszystko smażyć na dużym ogniu i dość krótko. 
Z cukinii i marchewki robimy wstążki/makaron, ja mam taką temperówkę do warzyw, ale można to zrobić z pomocą obieraczki do warzyw. Cebulę kroimy w piórka. Pieczarki kroimy w plastry. Makaron gotujemy zgodnie z instrukcją.
Na patelni/woku rozgrzewamy oliwę i dodajemy cebulę, którą lekko podsmażamy. Dodajemy pieczarki, doprawiamy solą i pieprzem, smażymy, aż pieczarki odparują, zdejmujemy je z patelni. Na wciąż gorącą patelnię dodajemy tofu razem z marynatą i smażymy kilka minut. Dodajemy marchewkę i cukinię, całość smażymy, aż warzywa odrobinę zmiękną. Dodajemy pieczarki, makaron i łyżkę octu, wszystko smażymy na dużym ogniu mieszamy do połączenia składników.

Wyszło tak dobre, że zrobiłam sobie do pojemników na jutro :D

Jedna porcja ma 451kcal, w tym: B 24,8g T: 18,8g W:46,6g

When we talk about a balanced dish, it does not mean that it has to have only one food from each group, but rather, that it must include all food groups: carbohydrate, protein, fat and vegetable/fruit. ⁣⁣⠀ ⁣⁣⠀ There are days when I offer various fats at a snack: chia, hazelnut butter and grated coconut. There are days when I offer two proteins at breakfast: egg and cheese.⁣⁣ ⠀⁣⁣⠀ ⁣⁣⠀⁣⁣⠀ It is not wrong to offer several options from the same group since this will give them the opportunity to choose. This can even help us when we offer foods that are often rejected. ⁣⁣⠀

Ingredients (for 2 servings):
* 2 medium & 1 big potatoes
* 1/2 onion
* 3 garlic cloves
* 200 gr peas
* 130 ml tomato sauce
* 1 tbs paprika
* 1 tbs curry
* 1 tbs all spices mix
* pinch of salt & pepper
🍲🥘
Recipe:
1. In a pot, add the chopped onion, garlic and salt. Cook, stirring frequently until the onion is soft and the onion becomes fragrant.
2. Add the spices and fry for 30 seconds. Dice the potatoes, add them to the cooked onion & garlic and spices.
3. Add the tomato sauce and some water to cover the potatoes, add the peas and let them cook until just tender and the peas are cooked.
4. Garnish with fresh parsley and serve.

1.3 lbs all purpose flour, - plus extra for rolling
pinch of salt
1 tsp baking powder
4.5 oz raisins
4.5 oz almonds, skin on - washed, drained and pat-dried
5 oz sugar
3 tbsp aniseed, roughly crushed - (or half aniseed and half fennel seeds)
5 fl oz vegetable oil
3 eggs - medium-size, at room temperature
2 fl oz orange blossom water - (or half milk, half orange blossom water)
1/2 cup sesame seeds - unhulled, slightly toasted
Egg wash
1 egg yolk
1 tbsp milk
drops of white vinegar
1/4 tsp instant coffee powder - (optional)
Method:

Ahead of Time - Prep the Ingredients
Soak the almonds in cold milk or water for at least 20 minutes. Drain and pat dry. Roughly chop them. 
Wash the raisins and soak them in the orange blossom water for 5 minutes.
Sift the baking powder with the flour and set aside.
Make the Dough

Sesame & Almond Biscuit 🍪!! Ingredients: 1.3 lbs all purpose flour, - plus extra for rolling pinch of salt 1 tsp baking powder 4.5 oz raisins 4.5 oz almonds, skin on - washed, drained and pat-dried 5 oz sugar 3 tbsp aniseed, roughly crushed - (or half aniseed and half fennel seeds) 5 fl oz vegetable oil 3 eggs - medium-size, at room temperature 2 fl oz orange blossom water - (or half milk, half orange blossom water) 1/2 cup sesame seeds - unhulled, slightly toasted Egg wash 1 egg yolk 1 tbsp milk drops of white vinegar 1/4 tsp instant coffee powder - (optional) Method: Ahead of Time - Prep the Ingredients Soak the almonds in cold milk or water for at least 20 minutes. Ingredients

2 Hide and seek pack
1/4 tspn of baking soda
1 cup milk 
Butter /ghee for greasing

Method
1 In a mixer grinder add 2 packs of hide n seek biscuit and grind it into powder .

2 In a mixing bowl add the grinded biscuit,milk and whisk it then add the baking soda and whisk it again and keep it aside.

3 Then take the appam pan and grease it with butter or ghee then add the batter into the pan and cover it with a lid and place it on the stove .

4 Cook it for about 2 to 3 Min once done flip it and cook it from another side for 2 to 3 Min .Once it is cooked from both the side turn off the flame.

5 Transfer it into the serving plate and drizzle chocolate sauce .

6 Your Chocolate Appam Panckaes are ready .

How to make these easy pancakes? I used @nutribullet to mix all the ingredients together- 2 🍌, 2 🥚, 2 handfulls of oats, scoop of @hellokabrita goats milk formula, sprinkle of cinnamon. Then i heated up coconut oil in the pan and formed small pancakes with table spoon. It makes about 20 pancakes. I packed them in small bag and put in the freezer so healthy breakfast can also be a quick breakfast! 🥞

☆ Mix together 200g minced pork, 200g chopped fresh prawns/shrimp, 2tsp light soy sauce, 2tsp shao hsing wine, 2tsp ginger paste, 1tsp oyster sauce, 1tsp sugar, 1tsp sesame oil, some finely chopped spring onion and coriander leaves, good pinch of salt and black pepper. Mix everything well.
☆ Fill the wonton wrappers and make sure there are no air bubbles before sealing with some water.
☆ For the soup, boil a couple of cups of homemade chicken stock. Add some light soy sauce, ginger julienne, sesame oil, sugar, spring onion, salt and black pepper.
☆ Boil the wontons in the soup. Add choi sum or pak choi.
☆ Once done, top with more fresh finger, spring onion and sesame oil. Chillies or chilli oil on the side.
☆ You can add any noodles you like to this.
☆ You can also fry them and eat with some sweet chilli sauce.

So simple and this makes about 40 wontons. You can freeze them as well. I made double the amount so work lunches are sorted this week! 😘.
