good morning and happy friday, my beautiful friends! I had the most wonderful power walk with my mom to start the day ☀️💐 there’s something so magical about being out in the early morning - the sun is shining low between the trees, the birds and singing, and it’s so quiet and peaceful.
whipped up these super quick and delicious sweet potato toasts to enjoy before getting started on some work! I’d already baked the sweet potato (you can toast them as well!) and boiled the eggs, so this took under 10 minutes!

20gr kacang almond (cincang)
20gr dry cranberry (cincang)
3 lembar roti tawar
1 buah telur
200ml air + 2sdm fibercreme
1 sachet teopicana sugar classic
1 sdm chia seeds
Sejumput cinnamon powder
Sejumput himalayan salt

Cara membuat:
- cincang terlebih dahulu almond dan dry cranberry.
-Larutkan fibercreme dg air di dalam wadah.
-masukkan sugar, cinnamon powder, chia seeds dan himsalt
-aduk hingga tercampur rata.

Bahan : 20gr kacang almond (cincang) 20gr dry cranberry (cincang) 3 lembar roti tawar 1 buah telur 200ml air + 2sdm fibercreme 1 sachet teopicana sugar classic 1 sdm chia seeds Sejumput cinnamon powder Sejumput himalayan salt . Get the recipe below: ​ ​Recipe: ​1 can of chickpeas⠀
1/2 can of coconut milk ⠀
1/2 can of chopped tomatoes ⠀
1 onion – finely chopped ⠀
2-3 garlic cloves – minced ⠀
1 tsp of turmeric powder ⠀
1/2 tsp of chilli powder⠀
1 tsp of curry powder ⠀
Salt to taste⠀
⠀
⠀
To serve: rice and veggies of your choice⠀
⠀
Add a dash of oil to a large pan and once hot add in the chopped onion. Fry the onion gently for 3-4 minutes until it starts to caramelised. Add in all the spices + the garlic cloves. Cook for another minute and continue stirring to avoid burning. Add a dash of water to prevent from sticking. Add in the drained chickpeas, coconut milk and tinned tomatoes. Mix everything together, add bit of boiling water just to enough to cover the chickpeas. Put the lid on an cook on a low heat for 20-25 minutes. Serve with some rice and veggies.⠀

I know I always talk about being vegan 🌱 because I am vegan! My hope is that I never put people off or put them down for their choices but to just show people a different way of living. Maybe learn some new recipes, start a new healthy habit or even go vegetarian or vegan! If not that’s okay. My main thing is health. What works for me may not work for you! healthyfoodie ROLLOS DE ZUCCHINI AL HORNO 😍

Ingredientes:
⭐️Pollo desmechado
⭐️Cebolla cabezona (1/4)
⭐️Cebolla larga (1/2)
⭐️Diente de ajo (1)
⭐️Tomate rayado
⭐️Aceite de coco
⭐️Zucchini (1 en laminas)
⭐️Espinaca (hojas)
⭐️Queso riccota
⭐️Queso mozzarella parmesano

Poner el pollo 🍗 en agua hervida con sal o a pitar hasta que se cocine, cuando se enfrie desmechalo, procura no desmecharlo tan pequeño para que cuando se cocine con la salsa y te lo comas se sienta el pollo. 
Por otro lado, para la salsa de tomate 🍅 , picar un cuarto de cebolla blanca cabezona, media cebolla larga  y un diente de ajo 🧄 triturarlo, untar el sarten de aceite de coco 🥥 y poner a sofreir. Mientras tanto ve rayando el tomate, la cascara quedara en tus manos, botala. 
Cuando la cebolla 🧅 y el ajo esten dorados, agrega el tomate rayado con sus jugos a fuego bajo, agregale sal, pimienta y cuando este hirviendo agrega el pollo desmechado, revuelve el pollo, tapa el sarten y deja cocinar todo a fuego bajo por 20 min aprox. (dependera de que tan seco quieras el pollo) aconsejo que se deje secar casi del todo, pues en el horno el zucchini bota agua. 
Con el zucchini, lo cortamos en delgadas laminas con el corta papas, le echamos sal y pimienta, juntas de a 3 laminas y en la mitad pones pollo, una hoja de espinaca o dos, queso riccota, lo enrollas y a la refractaria (así puedes hacer varios rollos). Recuerda que la refractaria debe estar untada de aceite de coco

Despues de poner todos los rollos, pones encima queso mozzarela, otro poquito de riccota y parmesano!
Poner en el horno a 190 grados por 15 a 20 min, ve mirando cuando el parmesano este dorado.  El horno es bueno que lo precalientes antes de meter la refractaria. 💚 Come sano, sé feliz 💚

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
1/2 cup (68g) sunflower seeds
3 cups (240g) rolled oats
1/2 cup (63g) coarsely chopped cashews
1 cup (156g) sunflower seeds
1/4 cup (36g) chia seeds
1/2 cup (68g) flax seeds
1/2 cup (34g) unsweetened shredded coconut
1/2 (2g) tsp salt
12 (186g) medjool dates, pitted
1/2 (108g) date water
1 tsp (3g) vanilla
honey for topping

𝗠𝗲𝘁𝗵𝗼𝗱:
• Place pitted dates in a bowl and fill with boiling water to cover all the dates. Let the dates sit in the water for 5-10 minutes. Reserve the soaking water.
• Remove the skins from the dates.
• Blend de-skinned dates, vanilla and 1/2 cup of the soaking water from the dates until smooth.
• Combine oats, seeds, nuts, coconut and salt with the date purée.
• Spread the mixture onto a lined cookie sheet and press into a thin even layer. Top with a light drizzle of honey.
• Bake at 300°F for 35-38 minutes and break into clusters.

healthyfoodie Call me naive, but I went into my first pregnancy expecting that after having my baby, the extra pounds would more or less fall off on their own. Everyone talks about snapping back, I expected to be like a celebrity and poof 💨💨💃💃. It didn't work like that. I began to gain weight and quickly. Everyone stressed nutrition and weight maintenance during the pregnancy (especially since I had gestational diabetes), but no one talked about postpartum health. The doctors made sure I wasn't depressed, but no one ever talked about food.⁠
Everything in my life turned into taking care of this cute little succubus. I shoved food in my mouth when I could. I didn't care what it was. Anything quick: Pasta, pizza, cookies, I lived on granola bars for like 3 weeks 😫😫
This was the turning point for me and not in a good way. I was losing myself. I was losing not only my figure, I lost my drive to do anything about it. I became a mom and my life became about being a mom.⁠
I had to learn not to lose myself trying to be everything to everyone. I had to start taking my health seriously. It didn't happen overnight. It wasn't flawless. But it happened. Losing weight is hard. Being overweight is hard. Choose your hard 💪♀💪

Introducing my fav protein chocolate oatmeal recipe!! 🤩 @performancenutbutter also launched their new cacao nut butter today, and I was lucky enough to receive a box. I used it instead of my usual peanut putter to top off this chocolate masterpiece and omg it’s tasty!! You gotta try this out 😋

Deets:
-Bring 1 cup of almond milk mixed with 1 tbsp of cocoa powder and 1 scoop of chocolate protein powder to a boil
-Add in 1/2 cup of old fashioned oats with 1/2 a mashed banana
-Cook on low/medium heat, stirring occasionally until it turns thick & creamy
-Remove from heat and cover for 2 mins
-I topped mine with cocoa nut butter, diced up strawberries, banana slices, chocolate granola, flax seeds and a little sprinkle of bee pollen ✨✨

For someone who's goal is weight gain, I found this quite triggering and found myself feeling like maybe I was chasing the wrong goal😭. • So, instead of viewing my friends (probably joking) statement as either one to take as inspiration to chase my own goals, or even just to assure her that she is perfect as she is.... I instead compared myself to her and (even though I literally NEED to put on weight) I found myself doughting myself and not actively focusing on my goals as much😢. • At first I blamed my friend for this (and other people always talking about weight loss like it is the only thing people want), but then I realised.... Her saying this doesn't mean she thinks I shouldn't be trying to gain weight, it doesn't mean she thinks anyone should be trying to lose weight, it doesn't even mean she is trying to lose weight😃.... It was a passing comment, a joke, one that my over thinking mind took as a personal thing. • Anyways, if you got to the end of this LOOONNNGG caption, I guess what I'm trying to stay is, everyone has different goals, different backgrounds, different lives, ect👥 we are all so unique and different, and only WE know what's right for us💁. • Switch your mindset, stay in your own lane, and CELEBRATE your peers successes, don't compare yourself to them😘. • On my plate is: French toast, coconut yogurt, warmed raspberries, coconut, and maple syrup drizzled after🍁😋
